I bought these shears on the recommendation of a dealer. They were to replace a set of shears made by J.A. Henckels that had proven unsatisfactory, in that a built-in locking mechanism kept engaging to the locked position during use, often at a critical point of operation. I attempted to file away part of the mechanism, and that improved matters somewhat. When the Henckels shears DID operate without locking, they cut most effectively and with satisfactory leverage.
In terms of the Wüsthof set, they have proven to be an immense disappointment, in regard to function and price. I would rather struggle with my Henckels.
1) The handles are smooth, stainless steel. Anyone who has cut up large numbers of chicken bones, in my case for stock, will know that one's hands get very greasy. My hands kept continually sliding off the handles, making operation next to impossible. I was forced to remedy the situation with a wrap-around of electrician's tape. (Very elegant!)
2) If one opens the shears, while using, just the SLIGHTEST bit too much, the tension spring pops out of its socket, and must be re-inserted before proceeding.
3) Often, unless one sets the chicken part in the deepest possible point between the blades, the shears, during the cutting motion, will literally slide off the bones towards the user. Also, one gets the feeling that there is simply not enough range of leverage motion.
On the plus side, these shears look and feel impressive, with metallic construction suggestive of an aircraft part. That solicits my rating of one star.
