Customer Review: sharp - but be careful!

This is an interesting little knife. Sharp - very sharp...and trecherous. Almost cut off the tip of my thumb with it trying to peel an apple. I find it useful for the finer points of deboning, but dangerous and difficult to use as a paring knife. It sits in the block now while I use my straight blade paring knife. Unless you do a great deal of deboning and want a small knife to compliment your 5 inch deboning knife, don't waste your money.

Description of Wusthof Grand Prix II 2-1/2-Inch Trimming Knife

This specialty 2-3/4-inch knife quickly de-bones chicken or trims fat and sinews from larger cuts of meat. The tapered profile and pointed tip let you cut closely around bones and joints. The firm grip, sharp blade and compact size mean it also works for peeling, paring and other tasks that require precision and control. Like the rest of the Grand Prix2 line, this knife is safe in the dishwasher, but hand wash for best results.

Grand Prix2 knives offer a compelling blend of precision, comfort, and legendary Wüsthof quality. Like the Grand Prix line, Grand Prix2 boasts a high-performance handle and a sleek contemporary look, with the addition of a more rolling, rounded profile that fits beautifully into the pocket of the palm. Molded ergonomically designed handles are pebble-textured for slip resistance even when wet, then permanently bonded to the entire tang for a superbly balanced feel. Blade, bolster, and tang are precision-forged from a single piece of high-carbon stainless steel for the ultimate in strength and durability. A computer-controlled process grinds and polishes the blade so it?s perfectly tapered from back to edge and tip to handle.
