Kitchen and Housewares Reviews of Wusthof Culinar 5-Inch Soft Cheese KnifeCustomer Review: Excellent knife; has stood the test of time Summary: 5 Stars
I purchased this soft cheese knife 5 years ago. I love both how it looks and how it feels in my hand. I use it several times a year. It has remained sharp and still cuts well. The way it cuts soft cheese is a dream. The knife doesn't bunch up the cheese and have to be worked loose like other knives. This cheese knife has held up well. It still looks great, good enough to put on a cheese tray for company. I've kept this knife in a drawer with the rest of my knives. I do wash it by hand, not in the dishwasher. Otherwise, I've taken no special care of it. I expect this knife to meet my needs for a very long time. I've had similar experiences with any Wüsthof product that I have purchased.
Description of Wusthof Culinar 5-Inch Soft Cheese KnifeThe wide, thin curved blade helps cut through soft cheeses such as Camenbert with ease. The holes in the blade create pockets of air which prevent extra-thin or soft slices from sticking to the blade. The precision forged blade, bolster, and tang are married to a hand-sculpted handle of the finest 18/10 stainless steel with an elegant satin finish. Wüsthof knives offer a harmonious blend of precision cutting performance, integrity of materials, safety, and comfort. The knife is hot-drop forged by hand from a single blank of high carbon no-stain steel, a specially alloyed surgical steel consisting of exacting proportions of carbon, chromium, molybdenum, and vanadium. The blade is perfectly tapered from bolster to tip, and from the back of the blade to the edge, and is honed by hand. Perfect balance is assured by the full extension of the tang through the length of the handle. A seamless fit at the bolster prevents food particles from entering. Dimensions: blade: 5½"L Materials: High carbon steel blade with 18/10 stainless steel handle Care: Dishwasher safe, although hand washing with a mild detergent is recommended Product of Solingen, Germany Elegant satin-finish handles sculpted from 18/10 stainless steel to fit the hand snugly distinguish Culinar knives from Wüsthof's other cutlery lines. Otherwise Culinar knives are exactly like other Wüsthof knives, embodying all the virtues that have earned the German manufacturer world renown. The principal parts of a Wüsthof knife--blade, bolster, and tang--are forged from a single piece of high- carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. Blades and beautifully formed bolsters are not as thick as some knives'. As a result, despite their heft, strength, and durability, Wüsthof knives are pleasingly delicate and marvelously balanced in action. This 5-inch specialty knife has no bolster because it doesn't need heft for its broad blade to slice through a soft cheese and the blade's heel needs to be sharp. The blade is curved so the tip can be inserted into a wheel of cheese and the blade rocked backward for a clean cut. Holes in the blade prevent it from sticking when it's slid out of the wheel. Like all fine knives, it should be hand washed. --Fred Brack
