Kitchen and Housewares Reviews of Wusthof Culinar 4-1/2-Inch Utility KnifeCustomer Review: Perfect handle, perfect blade Summary: 5 Stars
Wusthof has been making some of the best knives in the business for two centuries. This 12 cm (4.5") utility knife is from the Wusthof Culinar line, introduced in 1999 for professional chefs. The blades are from the same high carbon stainless as Wusthof's classic knives, while the handles on the Culinar line are of 18/10 stainless and provide a more ergonomic shape for kitchen use.
The handles truly are more ergonomic - the difference is much more than just looks. When I pick up a Culinar knife, it is as if the handle molds itself to my hand, becoming an integral part of me rather than a mere implement. When I had the traditional Wusthof Classic kitchen knives - the ones with the black handles and the three rivets - I hardly ever used the utility knife; I usually used a spare steak knife instead. When I replaced those knives with a set of Culinars, I gradually started using the Culinar utility knife more and more. I use it at every opportunity now, and it must be because the handle is so much more comfortable, since the blade is the same.
I initially worried that the stainless handles would feel colder than the composite handles of the Classic knives. This turns out not to be a problem. In fact, if the knives are cold, the rivets and the edge of the tang on classic knife designs - Wusthof and otherwise - actually feel much colder than the alloy used for the handles of the Culinar line, likely due to differences in thermal conductivity. As other reviews mention, the handles don't seem to get slippery; that may partly be because of the shape, and may partly be because of the brushed finish on the handles.
For those small jobs that come up constantly - everything from cutting small vegetables to slicing a snack to opening amazon.com boxes - this is the perfect knife. If you can afford the price, you won't regret getting one.
Description of Wusthof Culinar 4-1/2-Inch Utility KnifePerhaps the most basic and versatile knife for paring, peeling, trimming, and dicing fruits and vegetables, with a slightly longer blade for preparing larger fruit, herbs, and onions. The precision forged blade, bolster, and tang are married to a hand-sculpted handle of the finest 18/10 stainless steel with an elegant satin finish. Wüsthof knives offer a harmonious blend of precision cutting performance, integrity of materials, safety, and comfort. The knife is hot-drop forged by hand from a single blank of high carbon no-stain steel, a specially alloyed surgical steel consisting of exacting proportions of carbon, chromium, molybdenum, and vanadium. The blade is perfectly tapered from bolster to tip, and from the back of the blade to the edge, and is honed by hand. Perfect balance is assured by the full extension of the tang through the length of the handle. A seamless fit at the bolster prevents food particles from entering. Size: 4½" Dimensions: blade: 4½"L Materials: High carbon steel blade with 18/10 stainless steel handle Care: Dishwasher safe, although hand washing with a mild detergent is recommended Product of Solingen, Germany Elegant satin-finish handles sculpted from 18/10 stainless steel distinguish Culinar knives from Wüsthof's other cutlery lines. Otherwise Culinar knives embody all the virtues of other Wüsthof knives that have earned the German manufacturer world renown. The principal parts of a Wüsthof knife--blade, bolster, and tang--are forged from a single piece of high-carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. Blades and beautifully formed bolsters are not as thick as some knives'. As a result, despite their heft, strength, and durability, Wüsthof knives are pleasingly delicate and marvelously balanced in action. This 4-1/2-inch utility knife is ideal for slicing peaches, trimming a ham, and myriad other tasks. Like all fine knives, this utility knife should be hand washed. --Fred Brack
