The Wusthof 9 inch diamond steel can align your knife edge and unlike traditional steels, the Diamond Steel also contains fine abrasives that will sharpen your knife as well as re-aligning the blade. The interupted surface of this diamond steel allows the metal swarf to fall in the ovals so that the metal doesn't build up between the diamonds.
