I bought this for my wife as a Christmas present last year. At first, she didn't understand. Didn't understand the kind of money I spent on a knife! She even left it in the box for a few days. So I made the first move and brought this bad boy out to chop some tomatoes. Everyone, who doesn't spend a hundred dollars a knife knows what happens when you cut a tomato. The skin kinda squishes down, you press harder, and then you get the breakage and smush your way through the rest of the tomato.
I'm here to tell you those days are over. The blade on this is so sharp, just dropping the knive down on the tomato and your done. I buy those thick 6 pack steaks from Costco, with this knive, I can easily fillet them in half, now I have 12 steaks. Watermelons, slices clean in half, barely a hiccup. Parsley, green onions, diced in a matter of seconds. I thought this knife would be too big, but it handles like a paring knife on the small stuff, and a cleaver on the big stuff.
One very important tip. Be sure to buy a knive sharpner. After about a week you will notice little burrs showing up on the knive edge. A few swipes with a sharpner and your back in business. I chose this set Wusthof Create-A-Set Knife Storage Block because it has an awesome sharpner and a nice block to hold your knife and all your other lesser knives as well.
One more tip, do not leave this knife laying in your sink after using or put in the dishwasher or in a drawer. The blade is extremely sharp and someone could get cut grabbing it. What I typically do, is leave it aside on the counter, when cleanup time comes, I will hand wash it and slide back in it's block.
This was the best kitchen "appliance" purchase I have ever made. If your looking to buy a gift, no more blenders people, go with this knife.
