That involved a purpose built sharpening machine and daily use of the long honing steel. The process looked elegant swiping the blade back and forth on the steel but was frankly a pain. This little baby is a dream to use, fits in a drawer and does an excellent job. No special technique required. The only requirement is that you start with a high quality blade. A cheap blade is a cheap blade and nothing can change that.
Customer Review: Nice device Summary: 4 StarsThe Wuestof (can't type an umlaut) Pocket Sharpener is a handy thing to have. I brought one with me when I lived in Bali and used it to sharpen all of my friends' knives. It does an excellent job for a hand sharpener, and it is very convenient to carry. As might be expected, the edges it produces are not as fine, or as long lasting, as those from an electric sharpener. I prefer the Chef's Choice M130 Professional Sharpening System--the best sharpener available in my opinion.

Im useing on my deployment in Iraq and it has stood up to most everything I have dropped on it and put through it. It sharpend my smooth blade which was dinged up and dulled from constant use in the feild. I have used it often it is the only knife sharpener in my sqaud and everyone uses it. It takes a few swipes and the blade comes out smooth and sharp. Its small so it makes it easy to carry and fits in most kits. I think any Cook, Hunter, or Outdoors person should have one.

it is not a grinder: so do not expect to remove dings in blades, but even with dings, my sharpened knife slices through ripe tomatoes, which it hasn't done in years.
